KETOSMASH BACON WRAPPED SCALLOPS

Serves2
8 scallops
4 slices of bacon (cut in half horizontally)
4 T Butter
2 cloves of garlic, minced
6 c of spinach
1 c sliced zucchini coins
S&P TT
1 small tomato, chopped for garnish

Cook bacon in a skillet until just softened. Remove bacon from pan and saute garlic and zucchini in grease until cooked, add spinach and cook down. Move veg mix to the outside of the skillet and add bacon-wrapped scallops to the center of the pan. Lower heat and cover, allowing the bacon and scallops continue to cook. Turn scallops over after 8 minutes on low heat. Season with salt and pepper. Serve scallops over a bed of veg and sprinkle with chopped tomato.
