Low Carb Peanut Chicken Skillet

Ingredients

  • 1 1/2 lb chicken breast, chopped
  • salt and pepper
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 bell pepper, julienned
  • 3 cloves garlic, minced
  • 3/4 cup chicken stock
  • 1/3 cup peanut butter
  • 3 tablespoons coconut aminos
  • 1/2 teaspoon red pepper flakes

Instructions

  1. Season the chicken with salt and pepper on both sides.
  2. In a skillet, add butter and olive oil.
  3. Add the chicken to the skillet and sear for 5-10 minutes.
  4. Lower the heat to medium-low and add the bell pepper and garlic.
  5. Saute for 5 minutes.
  6. In a mixing bowl, combine and whisk chicken stock, peanut butter, coconut aminos, and red pepper flakes.
  7. Pour sauce into the skillet.
  8. Bring to a boil over medium-high heat, then reduce heat to low.
  9. Let simmer and stir frequently for 5 minutes.
  10. Serve while hot.
