Ingredients
- 1 1/2 lb chicken breast, chopped
- salt and pepper
- 2 tablespoons butter
- 2 tablespoons olive oil
- 1 bell pepper, julienned
- 3 cloves garlic, minced
- 3/4 cup chicken stock
- 1/3 cup peanut butter
- 3 tablespoons coconut aminos
- 1/2 teaspoon red pepper flakes
Instructions
- Season the chicken with salt and pepper on both sides.
- In a skillet, add butter and olive oil.
- Add the chicken to the skillet and sear for 5-10 minutes.
- Lower the heat to medium-low and add the bell pepper and garlic.
- Saute for 5 minutes.
- In a mixing bowl, combine and whisk chicken stock, peanut butter, coconut aminos, and red pepper flakes.
- Pour sauce into the skillet.
- Bring to a boil over medium-high heat, then reduce heat to low.
- Let simmer and stir frequently for 5 minutes.
- Serve while hot.
