Easy Ground Pork Stir Fry


  • ½ pound ground pork
  • 1 ½ cup mushroom, thinly sliced
  • ½ medium onion, thinly sliced
  • 3 tablespoons grated fresh ginger
  • 2 cloves garlic, minced or grated
  • 3 cups leafy greens (bokchoy, spinach, kale, collards, etc.)
  • 3 tablespoons coconut aminos
  • ½ tablespoon vinegar
  • ½ teaspoon chili powder or red pepper flakes or chili paste
  • Salt and pepper
  • Sesame seeds and green onions (optional)


  1. Heat a large pan or wok over high heat. 
  2. Put in the ground pork and let it cook for a few minutes until it is dark brown on the bottom. Flip and repeat on the other side.
  3. When both sides are dark, add 1 tablespoon coconut aminos and break up the meat, cooking until it is browned on all sides.
  4. Remove from the pan and set aside.
  5. Reduce heat to medium-high.
  6. Drain off most of the oil, leaving enough to cook the vegetables. If you have lean meat, you might need to add a tablespoon of butter or coconut oil. 
  7. Add the onion and mushroom and sauté until the mushrooms are a little brown. 
  8. Add the ginger, garlic, chili flakes/chili paste, vinegar, 1 tbsp coconut aminos, and the leafy greens. Cook until wilted, then mix in the meat.
  9. Taste, add remaining 1 tablespoon coconut aminos if needed, add salt and pepper to taste.
  10. Serve while hot.
